Muesli – Recipe


A fave breakfast of ours is yoghurt with muesli and fresh fruit of some sort – over Summer it was passionfruit and bananas and apples. Now it’s Winter, we may opt to just eat it with yoghurt or milk and some banana .. we get a lot less seasonal fruit here in HB over the cold months! Alternatively, we’ll have my home made porridge! <- see my rant about instant porridge here 😉

Home made muesli is so cheap to make and really simple – try this one on for size: 

1kg whole grain rolled oats (that’s about 2.2lb James)

1/4c of each or any of the following:

Diced dried apples, apricots, kiwifruit (looks great in the mix!) shredded coconut (unsweetened), sultanas, sun flower seeds, pumpkin kernels, currants, goji berries, cranberries, mango pieces, pineapple chunks .. Any dried fruit really. 

2c apple based juice (I don’t like the citrus taste of OJ in this, but if you like it – go for it!)

2c chunked pecans, brazil nuts and almonds. (Again, use any nut you like – I don’t like peanuts in this tho)

1/2c ground linseed (flaxseed)
1/2c light (non flavoured) oil – I use rice bran, no cholesterol!
1/2c honey (zap in the microwave so it goes runny)

Cut the dried fruit into uniform sized shapes (similar sizes) and soak in the juice. Can be done overnight, if you want to.

Put all the dry ingredients into a large roasting pan.
Mix well to incorporate the flaxseed pdr especially else it coats the fruit and looks manky.
Add the fruit, including any remaining juice that wasn’t soaked in.
Pour over the oil and honey. Mix and put in a low oven for 2 hours. When I say low, I mean around 150C / 300F
Stir every now and then.

Leave to cool overnight and store in an air tight container.

Eat!

PS Also makes quite a tasty topping over stewed fruit for a quickie pudding!

  1. James I will post the original recipe that Dad always made us and the additions can kinda grow from there perhaps lol it is one of the most healthy meals ever, isn’t it!

  2. Picture looks good! I had the CJ version for breakfast this morning. Activate yogurt, knife cut oats(soaked in cool water over night), chopped fresh apple, blue berries, and chopped pecans. It has got to be a favorite of mine and I just change up the fruit. Good, healthy stuff.
