We’ve got bridge tonight, so I decided to bake something to take along for supper .. This is my Nana Corinne’s chocolate cake recipe and is such a simple recipe as well as being reasonably healthy (until I slather it in chocolate ganache, anyway lol) One day I plan on fiddling with it, to see if it can be made with oil but it’s a lotta cake for only 1/3lb butter so what the heck..
Nana C’s Choccie cake
In a large bowl mix the following ingredients:
2c white sugar
2c white plain flour (sifted – always sifted!!)
2t baking soda
2t baking powder
In a 2nd bowl, mix the following ingredients:
150g butter ~ I think this is just under 2 sticks
2c boiling water with 1T coffee pdr
2/3c cocoa pdr (I use valrhona – see below)
Let the water mixture cool (10 mins or so) then add 2 eggs and beat to combine.
Mix both bowls of ingredients together and bake at 175 deg C in a lined cake tin. In my oven this took an hour but I’ve heard it can be done in 50 mins so basically check every 5 mins after 40 mins or so. Don’t ya love how recipes can be like this? Sorry!!
Oh yeah and this mix makes 2 med sized or 1 huge cake and the recipe can be halved or doubled easily!
