Lemon Delicious – Recipe

So the first time I had this was thanks to Nina – a friend from Auckland. It was SO simple but tasty, I played with the recipe a bit and came up with this varient .. if you imagine a self saucing pudding – this is a 2nd cousin but citrussy and light vs. choc and wicked!

Lemon Delicious

75g butter
175g caster sugar
3 large free range eggs – separated
Zest (skin) of 3 lemons
100g self raising flour
100ml lemon juice
175ml milk
Icing sugar (confectioner’s sugar) to dust / serve

Preheat oven to 170 deg.

Beat butter til soft and white (this does actually happen if ya whip it right!) add sugar and keep beating til the whole lot goes pale in colour.

Beat egg yolks (I just use a fork) and add slowly to butter and sugar mixture with the lemon zest.

Sift in half the flour, fold in and then work in half the lemon juice. Then blend in the milk (gently!)

Whisk egg whites until soft peaks form, work in 1/3 of the egg whites with a large spoon then carefully fold in the remainder.

Spoon the mixture into a large (1.5L) baking dish and bake in the oven for 30-35 mins or until lightly golden brown.

Serve hot or at room temperature, dusted with icing sugar & lightly whipped cream.
