Cupcakes – Recipe

So cupcakes are frightfully de rigueur now. And I confess, I tend to dislike popular things.. explains my friends list really .. but anyway .. cupcakes I DO admit to liking. For all that they’re trendy!

They are remarkably simple to make – not that I’d wanna do them whilst making a tower of chocolate terror, mind you. All that aside, here’s my basic cupcake recipe, its very user friendly so give it a go..

Cupcakes ala Joan

2 c white flour
1&1/2 c sugar
3t baking powder
1/2t salt
4 egg whites from large free range eggs
1/2 c butter
1 c skim milk
2 large free range eggs
1&1/2 t vanilla essence

Preheat oven to 350 deg F / 175 deg C

Line cupcake pans with paper liners. This is a must do – and omg have you seen how cute cupcake papers are nowadays? Love ’em.. I lead a sad life, we know this.

Combine flour, sugar, baking powder, salt, butter, milk and vanilla in a large mixing bowl. Beat at low speed for 2 minutes. Scrape bowl. Add egg whites and mix at high speed until fluffy and smooth, (approximately 2 mins)

Fill liners 1/2 to 2/3 full of the batter – Do not overfill!

Bake 20 to 25 minutes or until a *toothpick inserted into the centre comes out clean.

Cool 10 mins in the pans then remove and place on racks to cool.

Ice and decorate your cupcakes any which way you want.

*This is by far the most effective cake testing method I’ve ever found. Way better than the ol’ knitting needle!

So there are different types of cupcakes .. well, icing wise anyway .. my preference is the ones that sit inside the cup vs. those that spill over the top of the cup..


But some people prefer to do their cupcake icing this way:

Its all down to personal preference, at the end of the day. I do know one thing: we’re almost all of us more critical of our cup cake icing than anyone else is. So whilst you may sweat it out over the fact the swirl isn’t perfect or the decorations are crooked – no one else is gonna do anything except go “COOL” and scoff them down  – trust me 😉 

Oh and if you can’t be fagged with cupcakes cos of the icing fuss etc, just omit the vanilla, grate the skin off 1 lemon into the batter and then dust with icing sugar once cold.
