Couscous – Recipe


Couscous is one of those things – you either have never had it, or you love it – so it seems. CJ and I love it .. it can be used in so many ways and is actually nice. Unlike some things that are popular but just nasty 😉

To assist you I have ascertained over my many experiments with couscous that 1 cup of dry couscous = 2&1/2 cups cooked. The amount of times I’ve cooked too much and CJ’s finally started to get a bit snippy at the 4th serve of couscous in 2 days .. well you get the picture..

It really is simple – all you need to make this is:

1 &1/2 c couscous
2 &3/4 c water
1/4 tsalt

In a pot, bring water to the boil. Add salt and stir then add the couscous and immediately remove from the heat. Stir then cover and and allow to sit for about 5 – 10 minutes. Couscous should be light and fluffy, not gummy! If you stuff it up, throw it out and start again – it’s just nasty otherwise.

I find it delicious cooked in vege stock and maybe chicken stock would be flavoursome too ..

Will post a recipe on how to make this even better, later. Gotta go to the foodshow now!!
