Mac an’ Cheese – Recipe

A delicious and easy meal, macaroni cheese is one of those things that can go horribly wrong but is OH so good when it’s good.. I’ve had both – and learned how to make it so it’s never bad ..

To serve 4 large serves, you will need:

50g butter
1 white onion – diced
1/3c rice flour (or plain, if not gluten free)
2 & 1/2c warm trim milk
1t mustard (any – I like to use the dry english mustard)
1t salt
1/2t white pepper
1/2t cayenne pepper
1c grated tasty cheese
2c dry macaroni elbows – cooked til tender
2 slices butter bread – cubed

Preheat your oven to 200 deg C.

In a large pot, melt the butter. Add the onion and soften for a few minutes – no colour wanted! Add the flour and cook, stirring often .. This mixture should look like wet sand..

Gradually add the hot milk, stirring with a whisk til all lumps break down .. don’t panic, this’ll look scary to start with. Keep whisking!

As it starts to thicken, add the mustard, salt and pepper then the cheese.. Stir.

Pour the lot into a greased ovenproof dish, top with the cubed bread. Or omit for GF .. Sprinkle with a little salt and pepper and bake til bubbling and the bread is golden.. (Approx 12 mins)
