Apple cake – Recipe

So I am trying to come up with good recipes for cakes an’ stuff that use oil rather than butter cos heck, who can afford butter now? Rice bran oil is my fave oil for cooking / baking – it’s cheap and has no cholesterol: Not a bad combo huh! So why not try this recipe next time you want a nummy apple cake? Not only is it simple, it’s delicious!

1 & 1/4c white sugar
2c high grade white flour
2t ground cinnamon
2t baking soda
2 free range eggs
1/2c rice bran or vegetable oil
2t vanilla extract
1c chopped walnuts
5&1/2c diced apples – grannies (or cooking) would be best ..

Preheat oven to 325 degrees F (165 degrees C).

In a medium bowl, stir together the sugar, flour, cinnamon and baking soda.

Add the eggs, oil and vanilla then mix well.

Add the nuts and apples, mixing gently.. then pour into a 9×9 inch pan.

Bake for 45 to 50 minutes in the preheated oven. Remove from the cake tin once cooled ..

Serve dusted with icing sugar and ice cream .. or just plain, if you prefer 😉




  1. Yummm… with 5 1/2 cups of diced apple that is truly a generously delicious apple cake!!
