Spicy Apple & Pecan Muffins – Recipe


This was one of those “biff everything in a bowl and hope it works” recipes, and it did! Not only are they a gorgeous texture, they taste great and smell ah-mazing! Cinnamon and nutmeg are good like that 😉

To make 12 large muffins all you will need is:

2 large eggs
1/2c rice bran oil
1/2c sugar (I used caster, with a vanilla bean in it .. )
2/3c milk with the juice of one lemon in it – it may curdle, use it anyway. It’s good!
1 & 1/2c self raising (white) flour
Pinch salt
1t cinnamon
1t nutmeg
1/4t cloves (optional)
1/2c chopped (I used cooked but raw would be ok) cooking apples
1/3c sultanas

Toss the apple in the spices then add the oil and sultanas. Set aside to soak. This would be good done for hours but isn’t crucial. Could be done overnight if you wanted to, too.

Beat eggs, milk and sugar til frothy. I just use a handwhisk.

Sift dry ingredients into the wet and gently fold together.

Spoon into lined muffin trays and top with a pecan.

Bake 12-15mins in a pre-heated oven at 175deg C.
