There’s no picture cos I aint made these yet k. Well, not entirely true – I’ve made muffins a million times before, just not with the topping. But it seems an admirable idea.. So, I will make some tomorrow and post a pic then.. meantime this is my thinking on a variety of ways I’ve made Bloob muffins. Enjoy!
1 &1/2 cups high grade white flour
3/4 c white sugar
1/2 t salt
2 t baking powder
1/3 c rice bran oil
1/3 c milk
1 c blueberries – if super juicy, add 1D flour to them and stir gently
1/2 c white sugar
1/3 c high grade white flour
1/4 c butter, cubed
1&1/2 t ground cinnamon
Preheat oven to 200 Deg C.
Combine 1&1/2 c flour, 3/4 c sugar, salt and baking powder.
Place vegetable oil into a 1 c measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture.
Fold in blueberries.
Fill muffin trays (always use liners!) to the top, and sprinkle with the topping mixture.
To Make Topping:
Mix together 1/2 c sugar, 1/3 c flour, 1/4 c butter, and 1&1/2 t cinnamon. Mix with fork and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done..
