Roasted Tomato (Pasta) sauce – Recipe


By now we all know I am a lazy cook. Don’t get me wrong: I love to spend hours cooking but I hate fiddly dishes.. Peeling tomatoes fresh out of boiling water constitutes fiddly in my book.

So I dreamed up this “biff it all together and cook” recipe some years ago when we had a wee bit of a tomato glut in Hawke’s Bay!

This can be used as a pizza sauce, a pasta sauce, a meat sauce – it’s very versatile. That’s assuming you don’t eat it straight from the oven when it’s done.. it’s THAT good!

The qty’s below are a guide, you can add more or remove stuff as you see fit but I know this one works a treat:

1-2 large white onions, peeled and chopped to equal sized pieces (chunks is fine)
1 head of garlic, peeled and minced
3 red peppers / capsicums, stemmed, deseeded and cut into equal sized chunks
5kg of tomatoes – any breed, just the ripest you can get your hands on
1c red wine
Fresh herbs (thyme, basil, bay) if you want it – it really doesn’t need it tho so don’t buy them specially!

Preheat your oven to 150 degs C (slow roasting here we come! This intensifies the flavours.. don’t rush it k – This is a weekend sauce recipe..)

Chuck all the ingredients into a large roasting pan. Cover and cook for 1 hour. Stir after 1 hour, the return to the oven still covered (tin foil works fine). After 3 hours remove the foil and continue to cook the sauce for another hour or two.

This is about when you want the mother in law or “that friend” (you know – the one who thinks she’s Martha Stewart’s twin sister) to drop in cos you’ll be lounging in the sunshine drinking wine but your home will smell out of this world – domestic goddess status: Sorted!

Now some people suggest you remove the herbs at this stage and blitz the mixture to a puree. I don’t do this.. A) I don’t use the herbs. I add them to other dishes as I use the sauce and B) I don’t mind the chunks in my sauce.. So that is up to you..

Store in sealed containers in the freezer and voila – you have home made pasta sauce at the ready any time you want it. This recipe rocks for anyone who grows tomatoes and finds they just can’t get thru’ them all! Or buy tomatoes when the market gardens off PYO ..

Makes a nice gift in a preserving jar with a hand-written label and a bow around the top too. Oops sorry, channelling my twin sister .. 😉
