Banana Cake – Recipe


Some recipes just don’t need tweaking and I think this old fave of mine is one of them.. I always have a couple of manky old bananas mashed and in the freezer, so can belt out a banana cake any time the mood takes me. That said, it doesn’t take me often cos I actually loathe banana cake but this is a nice one, if you’re looking for such a cake 😉

Joan’s “Best ever” banana cake

125g soft butter
3/4c caster sugar
2 free range eggs  
2 large over ripe bananas – mashed
1/2t baking soda
2T boiling milk
1 & 1/4c self-raising flour, sifted twice – it’s my new thing when baking..

Preheat oven to 175 deg C (Not fan bake) and grease then line the base of a 22cm cake tin.

Using a wooden spoon, beat the butter and sugar until pale – then add the eggs, one at a time, mixing quickly through. Stir in the mashed bananas.

Dissolve the baking soda in hot milk and stir gently into the mixture.

Fold in the sifted flour and spoon the mixture into the prepared cake tin.

Bake for 40 to 45 minutes or until a wooden toothpick / skewer inserted comes out clean.

Leave to cool in the tin, then ice with lemony icing or chocolate icing or even (for extra decadence) try it with cream cheese frosting..
