Rich Flourless Chocolate cake – Recipe


Simple, gorgeous looking and chocolatey – need I explain more why this is so good? Oh and it’s gluten free if you’re that way inclined!

125g butter

3/4c caster sugar

1t vanilla extract

3 large free range eggs

125g dark chocolate

3/4c ground almonds

1T caster sugar

Cream butter and 1st measure of sugar together. Add vanilla. Separate eggs and yolks to the creamed mixture. Melt chocolate and leave it to cool for 5 mins before adding it to the butter mixture along with the almonds.

Whip egg whites until stiff peaks form.

Gently fold the egg white mix into the chocolate mixture.

Pour into a greased and lined 20cm round tin. Bake at 180deg C for 25 mins.

The cake will appear to be squishy don’t panic and do not keep cooking it. Remove from the oven and set aside.. It will sink and firm up as it cools.

Serve dusted with icing sugar, raspberries and gently whipped cream!

By the way if it cracks and carries on? Don’t fret k – it does this 🙂
