Pear, blue cheese & nuts – Salad recipe!


Summer has arrived here in Godzone and I am enjoying a variety of nommy salads .. had one in a restaurant the other day and replicated it at home. It was very simple and oh gosh so tasty!

Would go beautifully alongside a gorgeously cooked steak .. or as a meal on it’s own!

Fistful of rocket, per person (or any lettuce greens)
3 ripe pears – peeled, cored and chopped into lengths
5 ounces blue (I use Roquefort) cheese, crumbled
1 ripe avocado – sliced the same way as the pear (can be omitted if you can’t get any)
1/2 c thinly sliced spring onions
1/4 c white sugar
1/2 c pecans (or walnuts, if you can’t score pecans!) 😉
1/3 c best quality olive oil
3 T red wine vinegar
1 & 1/2 t white sugar
1 & 1/2 t mustard
1 clove garlic, chopped
1/2 t salt
fresh ground black pepper to taste

In a pan over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelise the pecans. Carefully transfer nuts onto waxed paper and allow to cool.

For the dressing, blend the oil, vinegar, 1 & 1/2 t sugar, mustard, chopped garlic, salt, and pepper. (A balloon whisk is all you need to do this)

To Serve:

On each plate: layer lettuce, pears, blue cheese, avocado, and sp. onions attractively.

Drizzle the dressing over the lot, sprinkle with pecans (broken up as they’ll set in a lump!) and serve.
