GF (Yummy!) savory muffins – Recipe


I tend to roll my eyes (and grimace!) when people talk gluten free, but lately have enjoyed these babies so thought I would share. They’re quite high in protein so good for anyone doing LC or Atkins diets and they’re great for anyone who can’t handle flour!

Don’t be put off by the fact you can’t simply chuck everything into a bowl and mix, as you can with “normal” muffins, these are not that complicated once you get the hang of it, I promise!

Here we go:

5 eggs – separated
150g cream cheese (cold, full fat)
1c grated cheddar cheese
2c finely grated vegs such as carrot, pumpkin and courgette (can also use broccoli, cauli .. any veg tends to work)
1 finely diced small onion (or chives / scallions)
1/2c ground almonds *
1t salt & 1t pepper & 1t dry mustard powder
Feta cheese for garnish**
chilli powder to taste***

In one bowl beat egg yolks, cold cream cheese and then stir in the grated cheese – I find a wooden spoon works well.

Add grated (raw****) veges including onion and seasonings, mixing to combine.

Beat egg whites until stiff then gently fold into the vege cheesy mixture. Try not to deflate it as you mix ..
Add in almond meal at this stage, too.

Spoon into well greased muffin pans and bake until golden on top and firmish to touch. Approx. 20-30 mins.

Remove from pans when you can easily handle them. Store in a sealed container in the fridge (they keep fresh for a week)

I find them best warmed up in the microwave with lashings of butter but you can also have them cold, they’re good either way.

Obviously not a “muffin” in the true sense of the word but you’d be hard pressed to find one that is as tasty and GF / LC so yeah, worth the experiment, I feel!

*Can omit, but I found they are a nicer texture with the almond meal. Main difference is height and chewiness, really.

**** made these with cooked, not good. The raw veges cook a bit and feel like nuts in the muffins once cooked!

PS wanna make these non-vego? Add bacon, duh! 🙂
